What to eat on a fasting day
It's another fasting day and I always find it difficult to (a) think of something interesting to eat for dinner and (b) think of anything to say in this blog. So what to do?
The first stop, as we all know, is the fridge, What do I have that's going off in there? Well there is some zucchini - it may well have gone completely off, but it's good stuff for fasting. Not many calories in zucchini. There's masses of ham - still left over from Christmas - but that's alright. Ham doesn't go off that quickly and we are gradually eating it - and a tiny bit won't be too bad. Celery - also almost all water. A few cherry tomatoes - dill, parsley - mint and other things out in the garden. No onions though - but there are are perhaps a couple of spring onions and some chives in the garden.
So I think I'll have a go at some filo pastries with a filling from some of those things. Should I bind it all together with an egg? Or maybe add a tiny bit of feta. If I spray the filo rather than brushing on oil I probably won't use as much. Is this just wishful thinking?
