A bonus quickie

Yotam Ottolenghi was having a rant about 'waste not want not' in his article about strawberries and in the course of the rant came up with this use for potato peel. I thought it was brilliant - so here it is. All the goodness is in the peel after all.
"We aren’t yet educated to regard a pile of potato peelings as an opportunity to create something delicious: mixed with a little harissa and olive oil, say, then baked in a hot oven for about 10 minutes, they become lovely little crisps that are just the things to toss through a salad." Or snack on. It doesn't have to be harissa of course - you could use any other flavouring you care to dream up - or don't flavour them at all, just roast them. I suspect the ones in the picture I found are just plain.
